  • 229.164 (e) (1) (D) (ii)Bare hand documentation. Provide documentation that handling of ready-to-eat foods with bare hands is accomplished using two or more of the following safeguards: double hand washing, nail brushes, a hand sanitizer, incentive programs for sick employees not to work, or control measures approved by the regulatory authority. Per Manager, will use gloves when handling RTE foods.

  • 229.164 (o) (6) (A) PHF>135. Potentially hazardous foods not at 135?F or above after being cooked to proper internal temperature. **Observed containers of cooked french fries at 95F.**
  • 229.163 (h) (5) handling soiled equip.. **Observed manager handling frier baskets, utensils, cooler handles then wipe his hands with a paper towel only and plate the french fries while using his bare hands to reposition the fries back onto the basket/plate.**
  • 229.166 (i) (1) (B) HWS improper use. Employee dumping drinks in hand sink. **Observed soda, ice and a drinking straw in the hand washing sink, can not use the HWS as a dump sink.**
  • 229.164 (o) (7) (A) consume by date (prepared). **No date markings on cut vegetables or cut potatoes stored in the walk in cooler.**
  • 229.168 (c) (2) toxics above items. Storing toxic items above food items. **Observed open containers of french fries stored under the First Aid Kit (on the wall). Alcohol, Peroxide and liquid chemicals stored on top of the Kit.**
  • ** No employee on site with a Food Manager's Certification. Manager did not have a Food Manager Cert, when ask to provide proof of any employee on site with the above Cert the Manager gave proof for an employee. When employee was asked for his ID the manager stated that this employee was not working or on site. A FOOD MANAGER'S CERTIFICATION REQUIRES THAT AT LEAST ONE PERSON WITH THIS CERTIFICATION BE ON SITE WHEN OPEN FOOD HANDLING IS OCCURING.**
