  • Non-Food Contact Surfaces
    Observation: Observed the interior of the fryer cabinets to have accumulations of grime and debris.
    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.
  • Mops - Drying Mops
    Observation: Mops not hung up to air dry.
    Correction: Wet use maintenance items such as mops must be hung in a position that allows them to air dry so they are not allowed to grow contamination which can then be spread through the establishment at the next use.

The above observations and the following were discussed with the person in charge:
-Employee health policy.
-Ice cream machine is cleaned and sanitized at least once daily.
-The slicer and all in use utensils are washed, rinsed and sanitized at least once every 4 hours.

  • Food Storage - Clean and Dry Location
    Observation: Food stored in a location where it is subject to splash, dust or other contamination. Observed multiple foods stored uncovered in the reach in cooler.
    Correction: Store food where it is not exposed to splash or install an approved durable, and cleanable barrier between the splash source and the food to prevent contamination.
  • Physical Facilities in Good Repair
    Observation: The floors by the mop sink and in front of the hot holding cabinet were observed to be in poor repair. The grout is worn between the floor tiles in these areas.
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.

    Observation: The following physical structures are noted in need of cleaning: 1-The drain pipes under the 3-compartment sinks, 2-the floor under the prep sink.
    Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.
