Discussed the following items with the Person in Charge:
1.Observed a work order for one of the air-screen coolers that was placed on 9/8/2015, the first day of school. Person in Charge stated that other work orders were submitted last year due to the air-screen not maintaining temperature. The air-screen has been pulled from the serving line by maintenance. Per discussion with the Person in Charge, a part is needed for the air screen. To date, the cooler has not been repaired. The remaining air-screen is currently holding temperature, however it appears to be crowded with additional product, which may lead to poor efficiency and temperature control. Recommend repairing the air-screen to accommodate product load for a school this size.
2. Observed what appeared to be a leak coming from the wall mounted dispenser. Ensure a work order is placed to ensure this unit is functioning properly.

Discussed the following with the Person in Charge:
1. Ensure small diameter probe thermometer is being used to take temperatures of thin foods. Small diameter probe thermometer was provided for staff.
2. Observed good food handling practices.

  • Critical: Food - Potentially Hazardous Food - Hot Holding* (corrected on site)
    Observation: Cooked pasta hot holding at improper temperatures in the hot holding cabinet. Observed pasta hot holding at 118'F and 98'F. Pasta was reheated.
    Correction: Rapidly reheat the food to 165°F and maintain at 135°F or above through the hot holding period.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: Milk (47'F) cold holding at improper temperatures in the screen cooler on the serving line. PIC has submitted a work order for the cooler. Milk stock will be kept low and will be left in the cooler for only a short period of time until the cooler can be repaired.
    Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria.
  • Physical Facilities - Cleaning Frequency and Restrictions
    Observation: Ceiling vents throughout the kitchen are noted in need of cleaning. PIC has submitted a work order to have this addressed.
    Correction: All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

Discussed the following items with the Person in Charge:
1. Recommend contacting pest control company regarding glue traps.
2. Recommend contacting sanitizer supply company regarding quaternary ammonium sanitizer dispenser. Sanitizer dispenses at approximately 200 parts per million. While this is within the acceptable range of use, it may weaken to below 150 parts per million before dish washing is complete. The facility washes all equipment used by hand due to the lack of a properly functioning dish machine.

Overall, facility observed to be clean and well-maintained. Good hand washing and food handling practices observed.
Advised PIC to use internal thermometer on pizza prep reach in cooler when documenting ambient air temperatures. Reach in cooler has a history of not being able to maintain food temperatures at 41'F or below, so it is used to store only what cook needs for that day, and no foods are left in the refrigerator over night. External thermometer shows a temperature of approximately 30'F, while internal thermometer reads approximately 42'F. EHS recorded the temperature during today's inspection to be 43'F.

2. Observed a cutting board that appears will need to be replaced soon due to staining.
3. Ensure foods are left uncovered during the cooling process.

Discussed the following items with the Persons in Charge:
1. Ensure small food spill in dry storage is cleaned up.
2. Dish machine is not in operation at this time. Facility is cleaning and sanitizing all equipment in the three compartment sink. PIC stated dish machine may be repaired. If repairs are made, please contact the health department to verify final rinse temperatures prior to use.
3. Facility in general is very clean and very well maintained.
4. Recommend replacing floor tiles in the dry storage room.
