We discussed: cooling procedures
  • Critical: Hands and Arms Cleaning Procedure* (corrected on site)
    Observation: A food handler touched her forehead but failed to discard gloves and wash her hands. Another food handler discarded gloves but failed to wash his hands before returning to prepare food.
    Correction: Wash hands properly following any potential contamination or when changing tasks. Both food handlers washed their hands after the Person in Charge made them aware of the situation.
  • Critical: Food - Potentially Hazardous Food - Hot Holding* (corrected on site)
    Observation: Macaroni and cheese in the hot holding unit is at an improper hot holding temperature.
    Correction: Rapidly reheat the food to 165°F and maintain at 135°F or above through the hot holding period. The food was rapidly reheated to 165°F.
