Comments:
Kitchen is clean and organized. Employee health policy handout discussed with food service manager. Door closer will be placed on employees rest room door. Fan grates will be cleaned in refrigeration units. Camp is revising policy concerning raw hamburgers being cooked in the field. Camp will use precooked hamburger to minimize risk of improper cooking.

Kitchen is clean and organized. Dishmachine was not functional at time of inspection due to water pressure issues. Manager has access to thermo strips and chemical test kits. Floor in produce walkin to be addressed prior to next year. Permit issued.

All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

Comments:
Kitchen manager is cafeteria manager in Wboro City School system. Camp opens 6-20-04 and closes 8-14-04. All equipment is clean and functional. Handsinks are stocked with soap and papertowels. Water sample collected 6-7-04, coliform absent. Temperature logs are being maintained for all refrigeration, freezers, dishmachine, and foods. Permit issued.

Staff has completed FMCC. Dishmachine is functional. Sanitizer available for the minimization of cross-contamination. Foodservice manager has experience as cafeteria manager in public school system.
