PIC removes the cooler lids so cooks can have easier access to the prep items, this most likely contributes to the higher temperatures
Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below.put the cooler lid back on the unit to maintain temperatures
Sanitizing Solutions, Testing Devices Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
Correction: Obtain a chlorine and quat test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.
Handwashing - Using a Handwashing Lavatory - No Other Purpose (corrected on site) Observation: The handwash station at the end of the line is being used for purposes other than washing hands (dumping drinks from tables).
Correction: The handwash facility identified above is to be used for washing hands only

Correction: Lower the concentration of the automatic sanitizer dispenser, add water to dilute the concentration in the buckets as a temporary fix

Chlorine concentration in dish machine measured at 100 ppm.
Gloves - Use Limitation (corrected on site) Observation: Single-use gloves while worn during multi-tasked food preparation: observed employee handling raw burger patties with gloves and then handling ready-to-eat foods with the same gloves.
Correction: Discard gloves when changing tasks and wash hands when changing from raw food to ready-to-eat (RTE) food preparation to prevent cross contamination. Single-use gloves shall be used for only one task such as working with RTE food or with raw animal food and used for no other purpose.

Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria. Discard all potentially hazardous foods in this unit and maintain cold holding of potentially hazardous foods at 41°F or below.
Equipment - Good Repair and Proper Adjustment Observation: The prep cooler across from the grills is not working properly.
Correction: Repair the cooler and insure it is capable of maintaining cold holding of foods at 41°F or below. Until this unit is repaired and properly functioning do not store any potentially hazardous foods in it.
Critical: Toxics - Storage of Toxic Containers* (corrected on site) Observation: Containers of cleaning products are not properly stored to prevent the contamination of food, equipment, utensils, linens or single service items.
Correction: Containers of cleaning products must be located in an area that is not above food, equipment, utensils, linens or single service items.
