This inspection was handled telephonically with the on site MarketPlace Development (MPD) staff. There was a small fire at the front counter. The MWAA Fire Dept. did not notify us but Jane from MPD did notify us. The Chipolte supervisor was direced by the undersigned to provide LCHD a signed statement that any food exposed to the fire was discarded, the front line thoroughly cleaned and the cause of the fire abated. Observation: Mops not hung up to air dry.
Correction: Wet use maintenance items such as mops must be hung in a position that allows them to air dry so they are not allowed to grow contamination which can then be spread through the establishment at the next use.
