Critical: Quaternary Ammonium Compound Sanitizer Solution Concentration per Use Directions (corrected on site) Observation: When tested, the quaternary ammonium compound-based sanitizing solution was observed to be at a concentration less than what is required for effective sanitization of food-contact surfaces of equipment and utensils. Observed the sanitizing solution in the wiping cloth bucket and the sanitize basin of the three vat sink measured at zero (0) ppm total quaternary ammonium compound. The line was not pulling the sanitizer. No utensls were being washed at the time of the observation.
Correction: Manager adjusted the dispenser for the quaternary ammonium and the quaternary ammonium began dispensing within acceptable range. Wiping cloth buckets were reassembled. The quaternary ammonium sanitizer used in this facility shall have a minimum concentration of at least 200 ppm OR a concentration between 150-400ppm based on the manufacturer's use directions and using the appropriate test kit.
Personal Care Items Stored in Employee Locker or Designated Area (corrected on site) Observation: Observed purses and two closed first aid kits stored on top of single service items in the dry storage areas.
Correction: Manager relocated the above items. All employees' personal care items shall be stored in a way that prevents the contamination of food and food contact surfaces through improper labeling or storage.
