Comments:
Breakfast is served from 6:30-9:30am. The menu consists of Toast, Cereal, English muffins, Honey Buns, Juice, Coffee, and Tea. There are no utensils used in contact with potentially hazardous foods.
Clorox Hard Surface Sanitizer is used to wipe down surfaces. Concentration measured 50ppm.
Though the regulations do not allow the use of home kitchens for food preparation, etc., the manager does have a 2 compartment kitchen sink in his apartment. If this sink is properly cleaned and sanitized prior to use, it would be a better temporary option for cleaning the utensils used on the buffet rather than using the laundry room hand sink.

Comments:
Facility serves English Muffins, Toast, Bagels, Cereal, Milk, Coffee, Hot Tea, and Juice.
Food contact surfaces such as Tongs, Cereal Dispensers, Coffee Pots, and Juice Nozzles must be washed, rinsed, and sanitized daily. The facility does not have a 2 compartment sink to accomplish these procedures. Currently, the hand washing sink in the laundry room is used. I recommend purchasing 3 plastic containers that you can utilize for cleaning food contact surfaces. Clean and sanitize by using the following steps: 1. Wash with hot soapy water. 2. Rinse with hot clean water. 3. Sanitize with 1 teaspoon of bleach to 1 gallon of water (50-100ppm). 4. Air dry. A chlorine sanitizer test kit is provided.

Ensure refrigeration unit is set at 36'F to 38'F in order to keep foods at 41'F or lower.

Comments:
Advised by PIC that personal restroom is utilized by employees which are all family members.
Prior to installation of 2 compartment sink, advised PIC in order to wash and sanitize utensils and equipment utilized for the continental breakfast the following procedure is to be followed:
1. Provide a container with water and sanitizer measured at the proper concentration level then add dishwashing soap to container in order to properly wash equipment.
2. Provide a second container with water and sanitizer measured at the proper concentration level - this will rinse and sanitize equipment.
Always wash, rinse and sanitize containers before using them.
