The purpose of today's visit was to conduct a risk factor assessment after receiving an alleged foodborne illness complaint. CFM stated that she has the employee health information provided from the first routine inspection, less than 30 days ago, and has not had an all staff meeting yet. Please be sure to review the material with all your employees and any future hires, ensuring they know their responsibilities on reporting certain illnesses and symptoms. No other violations were observed today. Please contact me if you have any questions. Thank you. It was suggested to the manager that cooked onions and peppers be cooled rapidly using an ice water bath to 41F or below prior to placing inside the refrigerator. NOTES: Water Heater: Tankless, elevated above mop sink. Dishmachine: ADS AD-3, 50 ppm.

The purpose of today's visit was to conduct a routine inspection. Please obtain a test kit from your dishmachine supplier the next time they service the machine. Please review the employee health material with all your employees at your next staff meeting and have everyone sign the agreement form.
