  • Food Temp Meas Device, Calibrated (corrected on site)
    Observation: The food temperature measuring device was found out of calibration in the range of use.
    Correction: Food thermometers shall be calibrated in accordance with manufacturer's specifications as necessary to ensure their accuracy. It is suggested that food thermometers be calibrated at least once a week in a cup completely filled with ice and cold water to a temperature of 32°F or calibrated in a pot of boiling water at 212°F.
  • Certified Food Manager/Certificate Process
    Observation: The person in charge (PIC) has a valid certificate of successful completion of a Certified Food Manager (CFM) exam but does not possess the CFM card issued by ORS Interactive, Inc.
    Correction: Food managers who possess a valid certificate of passing a food safety exam shall obtain the photo identification card from ORS Interactive, Inc. (see handout provided). A copy of the photo identification card can be faxed to the food safety section at (703) 653-9448. Failure to provide a copy of the photo identification card may result in further enforcement action.

The purpose of today's visit was to conduct a risk factor assessment inspection.
No violations were observed. Manager stated that the dishmachine is slated to be removed soon, it is not used. Quat at 3-vat sink observed at 200 pm.

The purpose of today's visit was to conduct a risk factor assessment after receiving an alleged foodborne illness complaint.
CFM stated that she has the employee health information provided from the first routine inspection, less than 30 days ago, and has not had an all staff meeting yet. Please be sure to review the material with all your employees and any future hires, ensuring they know their responsibilities on reporting certain illnesses and symptoms.

It was suggested to the manager that cooked onions and peppers be cooled rapidly using an ice water bath to 41F or below prior to placing inside the refrigerator.
NOTES:
Water Heater: Tankless, elevated above mop sink.
Dishmachine: ADS AD-3, 50 ppm.

  • Critical: Responsibility of PIC to Require Food Employees to Report GI Symptoms or Cuts, Disease, Medical Condition or Exposure to PIC (repeated violation)
    Observation: Upon discussion with the person-in-charge, one or more of the elements of an effective employee health policy is either missing or incomplete. A complete employee health policy is required to be in place at the food establishment. At the time of this inspection, the Health Department provided and reviewed handouts and resource information in a red folder labeled "Employee Health Policy.
    Correction: A complete employee health policy must have the following elements:
    1) Employee training on foodborne illness, particularly symptoms of illness and prevention of the Big Five illnesses (see "What is Foodborne Illness" handout)

Please obtain a test kit from your dishmachine supplier the next time they service the machine.
Please review the employee health material with all your employees at your next staff meeting and have everyone sign the agreement form. If you hire new employees, be sure to review it with them as well as part of their training.

    Observation: There is no test kit located in the facility for monitoring the concentration of the chemical sanitizing solution at the dishmachine.
    Correction: Obtain a BLEACH test kit.
  • Critical: Storage of Toxics, Not Above Food, Linens, Equip., Single-Svc. (corrected on site)
    Observation: Observed that poisonous and toxic materials are not properly stored to prevent the contamination of food, equipment, utensils, linens or single service items. Sanitizer bucket observed on prep counter between refrigerators.
    Correction: All poisonous and toxic materials shall be stored below food, equipment, utensils, linens, and single service items to prevent contamination. Recommended storing bucket on the prep table behind line or on the floor.
