    Observation: The handwashing facility located at the kitchen is blocked, preventing access by employees for easy handwashing.
    Correction: Access to the handwashing facility identified above is to be available during all hours of operation. Remove the @EQUIPMENT@ preventing its use.
  • Handwashing - Using a Handwashing Lavatory - No Other Purpose (corrected on site)
    Observation: The handwash station at the kitchen is being used for purposes other than washing hands.
    Correction: The handwash facility identified above is to be used for washing hands only
  • Hand Drying Provision (corrected on site) (repeated violation)
    Observation: No disposable towels were provided at the hand washing lavatory in the kitchen.
    Correction: Hand drying devices such as individual disposable paper towels, a continuous towel system that supplies the user with a clean towel or heated air hand drying device must be provided at all hand washing lavatories to encourage proper hand washing and avoid employees to drying their hands on their clothing or other unclean materials

Wash/rinse/sanitize station properly set up and utilized (QA tablets being used). PIC produced QA test strips.
Hand wash sink is still not properly stocked. PIC utilized own funds to purchase pump of hand soap and paper towels for TEMPORARY correction. Hand towel dispenser needs to be repaired, and hand soap dispenser needs to be properly stocked in order to ensure proper hand washing procedures.
New training measures need to be put into place to ensure all food service staff are knowledgeable in food service regulations. Left contact information so that hotel manager will contact me and discuss issues with food service.

    Observation: The person in charge failed to explain the correct procedures for cleaning and sanitizing utensils and food-contact surfaces of equipment.
    Correction: Ensure the designated person in charge (PIC) is knowledgeable about foodborne disease prevention, Hazardous Analysis Critical Control Point principles and Regulation requirements. The PIC should be prepared to recognize conditions that may contribute to foodborne illness. The PIC must also recognize conditions that fail to comply with Regulation requirements and be authorized to take the appropriate preventive and corrective actions to ensure that the Regulations' objectives are fulfilled.
  • Critical: Food Contact with Equipment and Utensils*
    Observation: Food in contact with equipment or utensils that have not been cleaned or sanitized as required.
    Correction: Use only cleaned and sanitized utensils or equipment during food preparation.
  • Temperature Measuring Devices
    Observation: There was no temperature measuring device located in the refrigerator.
    Correction: Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.
  • Warewashing Equipment, Determining Chemical Sanitizer Concentration
    Observation: A sanitizer test kit is not being used to ensure the chemical sanitizing solution(s) are at the proper concentration.
    Correction: Use a chlorine bleach chemical test kit to ensure the sanitizing solution is maintained at the proper solution.
  • Critical: Equipment and Utensils - Hot Water and Chemical Sanitizing*
    Observation: When tested, no sanitizer or a low concentration of chemical sanitizer was found in the sanitize basin.
    Correction: Provide chlorine bleach at proper concentration of 10ppm-100ppm and immerse or expose food contact surfaces to sanitizing solution for adequate time.
  • Equipment and Utensils, Air-Drying Required
    Observation: Pots/pans/food contact surfaces were observed cloth-dried rather than air-dried after cleaning and chemical sanitization.
    Correction: Items must be allowed to drain and air-dry before being stacked or stored. Cloth-drying may transfer microorganisms to equipment or utensils.
