Monitor teriyaki chicken temperate on sandwich make line. Cover chicken to help maintain 41 degrees or below if product is not selling quickly. Cutting boards are beginning to show signs of scoring - recommend replacing as bacteria can grow in grooves of scored areas. PIC stated that new cutting boards are available to use.

    Observation: Food stored under leaky condensor in walk-in. (All food was packaged)
    Correction: Capture condensate in trays to protect foods stored on rack until repairs can be made.
  • Equipment, Utensils, Linens, and Single-Service and Single-Use Articles
    Observation: Single service cups stored under towels for hand sink. Potential for contamination with "dripping" hands.
    Correction: Move to another location not directly under the hand towel dispensor. Correct in 2 weeks
