The operator provided metal probe thermometers, quat test strips and an Employee Health policy during today's isnepction.
Note: I discussed with the food manager on the process and procedure to adequately clean and sanitized the cookline soup kettle and its attachments, as well as, the need for a backflow prevention device/vacuum breaker water line for the hose reel with sprayer attachment at the Hobart dish machine.
  • Cooling Methods (corrected on site)
    Observation: The methods used for cooling were not adequate (Covered containers of recently prepared salads and tuna salad sandwiches were observed cooling gin the serving line pass-thru reach-in cooler). The operator removed the containers to continue cooling in the walk-in cooler).
    Correction: Cool foods by the following methods: 1. Placing food in shallow pans 2. Separating food into smaller thinner portions 3. Using rapid chill cooling equipment 4. Stirring the food in a container placed in an ice water bath 5. Using containers that facilitate heat transfer 6. Adding ice as an ingredient 7. Any other method that can effectively accomplish cooling.

    Correction: Repair the sneeze guard to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the sneeze guard, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.

    Observation: Chicken poppers on salads cold holding at improper temperatures. Salads were voluntarily discarded.
