The operator provided a metal probe thermometer, chlorine test strips and an Employee Health policy at this time. Also, the operator stated that the collection of potable water and the disposal of waste water is done at Southern RV on Jeff Davis Hwy.

Establishment with an adequate metal food stem thermometer & chlorine test kit. The exterior hand-washing set-up was adequate. The sanitizer & three vat set-ups were adequate. Potable approved water hose was to be delivered to unit today. Adequate employee health policy in place. Health permit posted & visible
  • Critical: Cooling* (corrected on site)
    Observation: Cooked chicken from the night before was noted not being adequately cooled to prevent the growth of harmful bacteria.
    Correction: Cool potentially hazardous foods from 135°F to 70°F within 2 hours and within a total of 6 hours from 135°F to 41°F. A longer time for cooling allows an ideal situation for bacterial growth. This has been shown to be the major contributing factor in many food-borne illnesses. Chicken product was discarded on site.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site) (repeated violation)
    Observation: Chicken in the blue/white cooler was found cold holding at improper temperatures.
    Correction: Chicken was not adequately covered with ice to maintain 41 degree Fahrenheit or below. Advised owner that ice in the chicken cooler is for maintaining product temperature and is not to be used for any other purpose.
  • Equipment - Good Repair and Proper Adjustment
    Observation: Upright refrigerator was found holding between 57-58 degree Fahrenheit.
    Correction: Repair/replace the upright refrigerator. Unit must maintain a product temperature of 41 degree Fahrenheit or below at all times.

The operator provided metal probe thermometers, chlorine test strips and an Employee Health policy (FDA Form 1B) during today's inspection.
A discussion about the use of a food grade hose for the collection of potable water, an outside handwashing station and overhead protection for the outside prep area also occurred at this time.
Note: The Mobile Food Dispensing vehicle unit operational inspection was conducted during the unit's participation in the 2015 Chesterfield County Fair at Chesterfield Fairgrounds.

  • Critical: Food - Packaged and Unpackaged - Separation, Packaging, and Segregation* (repeated violation)
    Observation: Raw foods of animal origin (raw chicken)stored over ready-to-eat (RTE) food (ice) in the mobile unit refrigeration unit.
    Correction: Separate raw foods of animal origin during storage, preparation, holding, and display from raw RTE food including foods such as fish for sushi or molluscan shellfish, or other raw RTE food such as vegetables, and cooked RTE food.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: Bags of raw chicken were cold holding at improper temperatures (raw chicken measured 47F and 51F). The operator rapidly cooled the TCS food products.
    Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria.
  • Temperature Measuring Devices
    Observation: There was no temperature measuring device located in the mobile unit spice reach-in cooler.
    Correction: Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.

    Correction: Separate raw foods during storage, preparation, holding, and display from raw RTE food including other raw food such as fish for sushi or molluscan shellfish, or other raw RTE food such as vegetables, and cooked RTE food.
  • Cooling Methods
    Observation: The methods used for cooling were not adequate.
    Correction: High ambient air temperature inside production trailer inhibits rapid cooling of salsa made from ambient temperatuer ingredients. Recommend pre-cooling ingredients in #10 cans in preparation of TCS menu items.

2. Menu: Jerk chicken, rice, paninis, french fries, canned/bottled beverages, portion controlled condiment packets.
3. Food source: Fort Lee commissary
4. Water pressure and temperature (156 degrees F) adequate.
5. Chlorine sanitizer and test strips on site. Food probe thermometer available.
6. Processes: Cooking, hot holding, cold holding, reheating, cooling.
7. OK for permit.

  • Light Bulbs Protective Shielding
    Observation: Light bulbs over cooking equipment not shielded, coated, or otherwise shatter-resistant.
    Correction: Shield or replace light bulb with a coated or shatter-resistant bulb.
