Observation: Automatic Dishwasher vent hood system is noted to be in disrepair /ceiling at the (unit). This appears to be due to insufficient ventilation of the hood system.(Casing ring not attaced and vent pipe.
Correction: Correct the current system to adequately ventilate condensation from the establishment and no peeling paint/drywall/plaster.

Observation: The grilled/Baked chicken was not cooked to a sufficient temperature and time to eliminate pathogenic bacteria.(162*F).Records on site/documented.3/10/2014.(9:30-10:25 am).
Correction: Continue to cook the stuffed food to heat all parts to 165°F or above for 15 seconds.Left overs cooked to >165*F(Reheated and Hot Hold >135*F.).

Observation: When,observed ,the (Rinse cycle) of the mechanical warewashing machine did not meet the manufacturers guidelines.(Hobart auto dishwasher).
Correction: A ( Rinse) cycle temperature of 150-160*F is only achieved (180-190*F),per the data plate must be reached & maintained. Contact repair service to adjust the unit to ensure proper cleaning and sanitization of equipment and utensils.Work order issued on 3-6-2014.(Work order# 185619).Incorrect reading on rinse cycle.Sent to Supervisor at NPS 3/6/2014.All dish items to be washed,rinsed,& sanitized in the 3 compartment sink,Manually/by hand.
