    Observation: Automatic Dishwasher vent hood system is noted to be in disrepair /ceiling at the (unit). This appears to be due to insufficient ventilation of the hood system.(Casing ring not attaced and vent pipe.
    Correction: Correct the current system to adequately ventilate condensation from the establishment and no peeling paint/drywall/plaster.
  • Floor and Wall Junctures, Coved, and Enclosed or Sealed
    Observation: Floor wall juncture (Tiles/Wall area) in back door area of kitchen, is not coved and closed to no larger than 1/32 inch space.
    Correction: Cove floor wall juncture Tiles.

    Observation: The mechanical warewashing machine display/ditigial gage was not operating in accordance with the manufacturer's specifications.(Gage on rinse cycle reading incorrect).154-155*F,should be 180*F(Internal temperature of rinse cycle reading 180*F via Temp rite sanitizing sticker on equipment/utensils.
    Correction: Operate the warewashing machine per affixed data plate specifications to ensure that equipment and utensils are properly cleaned and sanitized.Work order called in to NPS work order# -194580,dated 9/15/2014.Wash,rinse,sanitize in 3 compartment sink until warewashing machine is corrected to proper Manufacture Specifications..

  • Critical: Temperature, Cooking - Raw Animal Foods*
    Observation: The grilled/Baked chicken was not cooked to a sufficient temperature and time to eliminate pathogenic bacteria.(162*F).Records on site/documented.3/10/2014.(9:30-10:25 am).
    Correction: Continue to cook the stuffed food to heat all parts to 165°F or above for 15 seconds.Left overs cooked to >165*F(Reheated and Hot Hold >135*F.).
  • Warewashing Machines, Manufacturers' Operating Instructions
    Observation: When,observed ,the (Rinse cycle) of the mechanical warewashing machine did not meet the manufacturers guidelines.(Hobart auto dishwasher).
    Correction: A ( Rinse) cycle temperature of 150-160*F is only achieved (180-190*F),per the data plate must be reached & maintained. Contact repair service to adjust the unit to ensure proper cleaning and sanitization of equipment and utensils.Work order issued on 3-6-2014.(Work order# 185619).Incorrect reading on rinse cycle.Sent to Supervisor at NPS 3/6/2014.All dish items to be washed,rinsed,& sanitized in the 3 compartment sink,Manually/by hand.

    Observation: Ceiling/plaster/caulking/dry wall ceiling material around stove/exhaust vent piping in automatic dishwash area is not maintained in good repair
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.
