• 2580 - Condensate collecting inside walk-in refrigerator-collected in five gallon bucket.
  Repair condensate problem to prevent liquid waste discharge onto walk-in surfaces.
• 3180 - Vinyl tile floors noted in need of cleaning and conditioning application/treatment.
  All floors, walls, and ceilings must be cleaned as often as necessary to keep them clean. Cleaning of the physical facilities is an important measure in ensuring the protection and sanitary preparation of food. A regular cleaning schedule should be established and followed to maintain the facility in a clean and sanitary manner.

March 13, 2009 (Routine)

• 0810 - The methods used for cooling were not adequate. Boiled ribs in walk-in refrigerator were not cooled properly.
  Cool foods by the following methods: 1. Placing food in shallow pans 2. Separating food into smaller thinner portions 3. Using rapid chill cooling equipment 4. Stirring the food in a container placed in an ice water bath 5. Using containers that facilitate heat transfer 6. Adding ice as an ingredient 7. Any other method that can effectively accomplish cooling.
• 0820 A 2 - Critical Ribs in walk-in refrigerator cold holding at improper temperatures.
  Discard the food and ensure that potentially hazardous foods for cold holding are maintained at 41F or below to inhibit the growth of harmful bacteria.
• 1190 - The ambient (air/water) temperature measuring device (degrees F) located in the preparattion unit is not accurate.
  Provide a temperature measuring device that is accurate within +/- 3 degrees Fahrenheit in the intended range of use.
• 1790 - The cavity of the microwave oven is observed soiled.
  Using the manufacturer's recommended cleaning procedure, clean the microwave oven at least every 24 hours.
• 2890 - Light bulbs in dry storage are not shielded, coated, or otherwise shatter-resistant.
  Shield or replace light bulb with a coated or shatter-resistant bulb.

December 05, 2008 (Routine)

• 1570 - Unused or non-functioning equipment not removed from the premises. Two-door reach-in refrigerator at service counter is not fuctioning and is being used as a storage unit.
  Remove any unused or non-functioning equipment from the premises.
• 2830 - Repeat Floor wall juncture in some areas are not coved and closed to no larger than 1/32 inch space.
  Cove floor wall juncture to no larger than a 1/32 inch space.
• 2930 - Outer opening of the food establishment is not protected against entry of insects and rodents. Back delivery door is not self-closing.
  Protect the food establishment against the entry of insects and rodents by 1. Filling or closing holes and other gaps along floors, walls, and ceilings, 2. Closed, tight fitting windows, and 3. Solid, self-closing, tight-fitting doors. Insects and rodents are vectors of disease-causing microorganisms which may be transmitted to humans by contamination of food and food-contact surfaces.

  Nonfood contact equipment that is exposed to splash, spillage, food soiling, or requires frequent cleaning must be smooth, durable, and nonabsorbent.
• 2830 - Floor wall juncture in several areas is not coved and closed to no larger than 1/32 inch space.
  Cove floor wall juncture to no larger than a 1/32 inch space.
• 2890 - Light bulb in the walk-in cooler not shielded, coated, or otherwise shatter-resistant.
  Shield or replace light bulb with a coated or shatter-resistant bulb.
• 3080 - Less than 50 foot candles of light was noted
  Provide at least 50 foot candles at a surface where a food employee is working with food or working with utensils or equipment such as knives, slicers, grinders, or saws where employee safety is a factor
