Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.

Facility currently has no Certified Food Manager (CFM). A copy of the Chesapeake food training schedule was provided to the manager. Discussed several proper procedural issues. Lighting measured at 64 foot candles in the kitchen. Health Permit will be issued upon receipt of the Certificate of Occupancy and at least one staff member signed up for the CFM course.
