Walk-in cooler appears to not be working. Work order placed today and will fax the completed work order.
Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site) Observation: Several foods in walk-in cooler were cold holding at improper temperatures (popcorn chicken, sour cream, yogurt, & chicken patties were out of temperature and voluntarily discarded). Relocated foods that were prepared today.
Correction: Discard the food and ensure that potentially hazardous foods for cold holding are maintained at 41°F or below to inhibit the growth of harmful bacteria.
Temperature Measuring Devices - Ambient Air and Water Observation: The ambient (air/water) temperature measuring device (degrees C) located in the walk-in cooler is not accurate (on the outside). Repair and/or provide a separate thermometer inside cooler.
Correction: Provide a temperature measuring device that is easily readable and accurate to +/-1.5 degrees Celsius in the intended range of use.

Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities. Repair coving to render floor/wall juncture smooth and easily cleanable. Correct within 30 days.
Critical: Sanitizer - Criteria/Chemicals for food contact* (corrected on site) Observation: quaternary ammonia concentration being applied to food contact surfaces does not meet the requirements of 40 CFR 180.940 ( >400 ppm quat in sanitizing buckets)
Correction: Utilize only concentrations that meet the requirements of 40 CFR 180.940 when applying to food contact surfaces. Reduce concentration levels to 200 ppm quat
