Risk Factor
Generally facility found to be clean & well ordered. Staff knowledgeable about employee health policy, good personal hygiene practices observed. Good food temperatures observed thru food flow. QT sanitizer 200 ppm. Recommend stabilizing table with sneeze guard for cookies / pastries.
Food Display Observation: The food on display at the self-service sandwich bar is not protected from contamination.
Correction: Protect food on display by the use of packaging - counter, service line, or salad bar food guards - display cases - or other effective means to prevent contamination.
Critical: Time as a Public Health Control* Observation: Another method of temperature control was observed after time was implemented as the control. (the food was either reheated or placed under refrigeration)
Correction: Discard food that is not cooked and served or served if ready-to-eat within 4 hours from the point in time when the food is removed from temperature control.
Equipment - Cutting Surfaces Observation: The cutting board(s) along the @LOCATION@ are heavily scratched and scored. The food contact surface is no longer easily cleaned and sanitized due to condition.
Correction: Resurface or discard and replace the cutting boards to provide a food contact surface that is smooth, easily cleaned and sanitized.
