  • 4-301.11 - The following mechanical refrigeration unit is not currently operating as required to cold hold food at a temperature of 41F or less. Middle upright refrigerator at back was observed with an internal ambient temperature of 44F, with external thermometer reading 50F. CFM had been aware of problem and had pulled items prior to inspection begining. The 2dr reach-in refrigerator underneath the espresso machine was observed at 45F, but was in use for the entire length of the inspection, items in the unit that were out of temperature were believed to have been pulled from the back refrigerator.

Comments:
The purpose of today's visit was to conduct a routine inspection. No violations were observed today. It was suggested to the CFM that the dishmachine be drained 1-2 times per day to maintain a wash temperature minimum of 150F and a final rinse minimum of 190F. The purpose of today's visit was to conduct a routine inspection. CFM has called a technician to repair back refrigerator, it is highly suggested that the temperature of the reach-in refrigerator underneath the espresso machine be monitored and repaired if necessary. September 14, 2006 (Critical Procedures)

Comments:
This is a critical procedures inspection. No critical violations were observed today. Dish machine: wash 160F, rinse 182F. There is one restroom for customers and employees. Per the CFM, there are a maximum of 3 employees on duty at once. There are 12 seats in the dining room. Therefore, the restriction is met which requires no more than 15 people in the establishment due to one restroom. A new permit will be sent which reflects this restriction.
The water heater is above the mop sink. Call me with the model number, btu/kw and gallons per hour (gph) of the Lochinvar unit.

Violations: Comments:
This is a routine inspection. Correct critical violations immediately and noncritical violations within the next 10 days. No evidence of pest presence was noted and no evidence of hot water deficiency was observed at the time of this inspection.
No mishandling of foods was observed and the facility has shown much improvement in maintaining equipment surfaces in clean condition, relative to previous inspection. The facility as a whole is clean. Continue to maintain food and nonfood contact surfaces in clean clean condition.

Today's inspection is a follow-up to verify compliance regarding violations that were cited during a routine inspection dated 10/12/05.The follow-up inspection has now been conducted and the establishment is in full compliance. Continue to maintain the facility in a clean condition. The facility as a whole is very clean.
