The purpose of today's visit was to conduct a routine inspection. No violations were observed today. It was suggested to the CFM that the dishmachine be drained 1-2 times per day to maintain a wash temperature minimum of 150F and a final rinse minimum of 190F.   • 3-501.16(A)(2)(a) - Corrected During Inspection Critical The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: Cream inside 2dr reach-in was observed at 51F, discarded. Milk at customer self-service 45F.
    Potentially hazardous foods (time/temperature control for safety food) shall be held cold at a temperature of 41F or below. Items were most likely pulled from the middle upright refrigerator that CFM stated was out of temperature, items discarded.
  • 4-301.11 - The following mechanical refrigeration unit is not currently operating as required to cold hold food at a temperature of 41F or less. Foods exposed to temperature abuse for over 4 hours shall be discarded, otherwise, the foods shall be stored in other working refrigerators.

CFM has called a technician to repair back refrigerator, it is highly suggested that the temperature of the reach-in refrigerator underneath the espresso machine be monitored and repaired if necessary. Comments:
This is a critical procedures inspection. No critical violations were observed today. Dish machine: wash 160F, rinse 182F. There is one restroom for customers and employees. Per the CFM, there are a maximum of 3 employees on duty at once. There are 12 seats in the dining room. Therefore, the restriction is met which requires no more than 15 people in the establishment due to one restroom. A new permit will be sent which reflects this restriction.
The water heater is above the mop sink. Call me with the model number, btu/kw and gallons per hour (gph) of the Lochinvar unit.

    CORRECTED DURING INSPECTION. Maintenance equipment supplies and tools such as brooms, mops, vacuum cleaners, and similar items must be stored so they do not contaminate food equipment, utensils, linens, and single-service and single-use articles.
Comments:
This is a routine inspection. Correct any remaining critical violation immediately and noncritical violations within the next 10 days. A temporary duplicate permit was issued to the manager at the time of this inspection. An other health permit will be sent in the mail. Post permit in customer area .

  • 3-501.16B - Critical Repeat Whole milk and skim milk were cold holding at improper temperatures.
    Cold hold potentially hazardous food at 41F or less to inhibit the growth of harmful bacteria.
  • 4-601.11C - The interior surfaces of storage cabinets are soiled with debris. The rubber gaskets on the doors of reach-in refrigerators are soiled.
    Clean these surfaces properly and more frequently to prevent dirt build-up.
  • 6-501.12A - Repeat The carpeting in the dinning area is very stained and in need of deep cleaning.
    Shampoo this carpet and maintain it in clean condition at all times.
  • 4-501.11B - Repeat The rubber gasket on the door of the small refrigerator is torn.
    Repair or replace the damaged gasket.
  • 5-501.113B - Repeat Outside refuse container was uncovered.
    Close doors and lids on all exterior refuse containers to prevent attraction and harborage of rodents and other pests.
  • 4-601.11A - Critical The interior surfaces of the reach-=in refrigerators are not clean.
    Maintain refrigerator interior surfaces in clean condition at all times. Clean spills soon after they occur to prevent accumulation of residue and debris.

  • 6-501.11 - Observed broken paper towel holder at the handsink at the dry storage room.
    Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.
  • 4-501.11B - Repeat The door gasket of the Delfield refrigerator at the back of the service counter is damaged.
    Repair or replace the door gasket in accordance with the manufacturer's specifications.
  • 3-305.11A3 - Boxes of coffee stored on the floor and/or food stored less than 6" above the floor at the (1) front room behind counter, (2) dry storage room, and (3) walk-in refrigerator.
    Elevate food storage onto approved shelving with minimum 6" legs or casters.
  • 6-501.16 - Mops and brooms not hung up to air dry.
    Wet use maintenance items such as mops must be hung in a position that allows them to air dry so they are not allowed to grow contamination which can then be spread through the establishment at the next use.
  • 3-501.16B - Critical Half-&-half milk cold holding at improper temperatures (45F).
    Corrected during inspection: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41F (45F) or less. Note: HACCP guidelines recommend discard of potentially hazardous food items found stored at 70F or above for 2 or more hours.
  • 5-501.113B - Outside refuse container was uncovered.
    Corrected during inspection: Close doors and lids on all exterior refuse containers to prevent attraction and harborage of rodents and other pests.
Comments:
This is a routine inspection of the food facility. Please correct all the non-critical violations. The time limit for correcting these violations is 90 days from the time of inspection.
