    Observation: Hood system due for cleaning.
    Correction: Alter or replace this equipment so that the filters can be easily removed for cleaning and replacement. Clean and sanitize hood system.
  • Equipment - Good Repair and Proper Adjustment
    Observation: Observed water inside Box 5.
    Correction: Check box 5 to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair box 5, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.

Certified food manager coming up due for recertification class. Copy of schedule given to manager. Refrigeration is holding at proper temperatures. Viewed Haccp log book with manager. Copy of food handler class schedule given to manager. Manager to recheck concerning Business License. Facility recommended for permit. Food permit will be issued once application and permit fee is processed.
No violation noted during this evaluation.
04/21/2015Routine
Drink unit registered at 41 degrees, Deli unit registered at 40 degrees. Informed by manager that maintenance is aware of leak. Product received from Sysco during inspection. Product being checked and put away in walk-ins. REminder to manager to keep copies of all manager certificates and food handler cards on site. Copy of food handler class and food manager class schedules given to manager.

    Observation: Observed water on floor coming from underneath dishwasher (near fire extinguisher).
    Correction: Repair the dishwasher to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the dishwasher, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.
  • Critical: Plumbing System Maintained in Good Repair*
    Observation: Leak from pipe underneath three compartment sink. Observed pan of water underneath sink.
    Correction: All repairs to plumbing equipment and lines are to be in accordance with law. Properly repair the equipment.

Chicken noodle soup registered at 150 degrees, Beef vegetable soup 172 degrees. Reach-in (milk/yogurt) registered at 38 degrees. Viewed HACCP log book. Serv Safe manager's certificate need to be transferred over to Norfolk certified food manager certificates. There is a $10 transferring fee. Facility recommended for permit. Food permit, copy of application and receipt issued to manager.
  • Critical: Food - Potentially Hazardous Food: Cold Holding* (corrected on site)
    Observation: Sausage gravy, sausages and grilled turkey cold holding at improper temperatures.
    Correction: Cold hold potentially hazardous food at 41°F or below to inhibit the growth of harmful bacteria. Remove sausage gravy, sausages and grilled turkey from refrigeration units and place in ice water bath.

Reach-in (salads/milk) registered at 34 degrees. Temperature logs are posted and current. Refrigeration and product checked is holding at proper temperatures. Viewed employee certificate for food safety training. New certified food manager for location. Cfm to post current certificate. Shipment of product arrived and being stored away. Overall facility is clean and well maintained.
No violation noted during this evaluation.
09/05/2013Routine
Walk-in cooler registered at 40 degrees, front cooler(milk/yogurt) registered at 34 degrees. Four buckets of wiping cloth sanitizer registered between 100- 200ppm. Recheck hood system stickers attached on hood for cleaning dates. Post current stickers on hood system. Viewed temperature logs for units. Continue to maintain accurate logs daily. Informed that managers are scheduled to attend food manager's certification class. Discussed inspection with chef as inspection was being conducted. Facility recommended for permit. Once updated application and permit fee of $40 is received and processed, Health permit for establishment will be issued.
  • Critical: Food - Potentially Hazardous Food; Hot Holding* (corrected on site)
    Observation: Salibury steak hot holding at improper temperatures.
    Correction: Rapidly reheat the food to 165°F and maintain at 135°F or above through the hot holding period.
