Informed by Executive Chef concerning hood system to be cleaned this month by Michael Steam Pro. Informed chef to have hood servicer place a updated sticker on hood with service dates. Chef adjusted hot hold unit temp do to unit being turned down. Horizon Beverage air fridge gauge to be rechecked for unit to maintain temp of 41 degrees and below. Observing dishwasher preparing to clean out dish machine.

    Observation: Temperature logs are not being maintained daily by the establishment.
    Correction: Maintain accurate temperature logs.

Temperature log sheets are posted at refrigeration units. Refrigeration is holding at proper temperatures. Turkey and bacon used prior to inspection. Copy of temp sheets given to Executive chef. Facility recommended for permit. Food permit, copy of receipt and application given to Executive chef.

    Observation: Line lowboy door gasket torn.
    Correction: Repair or replace the line lowboy door gasket in accordance with the manufacturer's specifications.
  • Critical: Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils (corrected on site)
    Observation: Observed food debris inside the following food contact surface: left line lowboy
    Correction: Clean and sanitize these surfaces for food contact.
  • Physical Facilities in Good Repair
    Observation: Cover missing from floor plug.
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.

Hood system sticker posted on hood expired. Certified food manager signed up for next recertification class. Copy of food temperature and dishwasher log given to manager. Copy of food manager class schedule given to manager. Informed manager to recheck all staff food handler cards and have any staff that need to update cards to attend food handler class within the next two- three weeks. Facility recommended for permit. Food permit and copy of receipt issued to manager.
  • Equipment - Good Repair and Proper Adjustment
    Observation: Two compartment sink faucet in need of repair.
    Correction: Repair the two compartment sink faucet to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the two compartment sink faucet, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter.

Walk-in Box #1 registered T 39 degrees and Walk-in Box #2 registered at 40 degrees. Spoke with chef Danny concerning inspection and lighting to be repaired by on site engineer. Refrigeration and product were holding at proper temperatures during inspection. Temperature logs are posted at each unit and kept current. Overall facility is kept clean and well maintained. Facility recommended for permit. Health permit, copy of receipt and copy of application issued.

    Observation: One light bulb under hood system not shielded, coated, or otherwise shatter-resistent.
    Correction: Shield or replace light bulb with a coated or shatter-resistent bulb.
  • Lighting, Intensity
    Observation: Less than 50 foot candles of light was noted under hood system.
    Correction: Provide at least 50 foot candles at a surface where a food employee is working with food or working with utensils or equipment such as knives, slicers, grinders, or saws where employee safety is a factor
