Observed dishwasher machine reaching a max temperature of 118°F. Dishwasher manufacture faceplate stated machine reach a minimum of 125°F. CORRECTION: Need to raise to hot water temperature to above 125°F. Highly soiled items need to be wash, rinsed, and sanitized in 3 compartment sinks until washing machine temperature issue is fixed.

Observed silverware holding container in wait station with some bits of dried food. Observed the tandoor oven with excess food debris accumulated on the sides. Please increase cleaning frequency of all nonfood-contact surfaces.
