The inspectors found employee beverages were being stored on the dirty dish rack and in the food storage shelves. THe dish machine did not dispense minimum 50ppm of chlorine. The inspector talked with manager that need to use the 3 compartment sink until the dish machine is properly repaired and is sanitizing with at least 50ppm of chlorine. A food container lid was found being stored in the basin of the hand sink located next to the grill line. Raw wood was found under the reach in cooler behind the cashier line next to the bread display. A gasket was found torn on the reach in cooler in the preparation area on the True Food Cooler. The dish racks for the dish machine are in need of cleaning due to mineral deposit buildup. The cutting boards in the back food preparation area were found to be blackened and scored. The food slicer blade was found to be dirty at the time of inspection, all parts need to be taken apart and properly cleaned and sanitized. The fire suppression system above the cooking line has buildup of grease on the lines that are developing grease droplets on the lines. The walk in cooler has a large amount of ice build up along the top and walls of the cooler that needs to be removed. The exterior of the baking oven needs to be cleaned due to buildup of grease along the top area around the door. The dumpster lids were found to be open at the time of inspection. The drywall is exposed behind the cashier line next to the sink in the bread display area. Throughout the cooking food preparation, and storage areas the floor under the equipment needs to be cleaned. The ceiling tiles around the baking ovens need to be cleaned. The hood ventilation system over the cooking line has a light bulb that needs to be replaced.
