Violation descriptions and comments

An employee was observed going from handling dirty dishes to clean dishes without first washing hands in the ware wash area. An employee was observed donning gloves without first washing hands in the preparation area.
Cut iceberg lettuce on the salad bar was 53�°F.
The soap dispenser was not functioning correctly at the ware wash hand sink, and thus no soap was provided.
Pan cleaner and bleach were stored next to clan pans under the preparation sink. Chemicals were stored above customer single-use food containers in the storage room.
A container of Garbonzo beans was 55�°F and a container of kidney beans was 51�°F, and both were cooling with the lids on in the salad bar reach-in refrigerator.
The door gasket was torn on the ice cream reach-in refrigerator. The caulking was soiled on the dish machine dirty drain boards.
The interior of the reach-in refrigerator under the salad buffet salad bowl storage was soiled with food debris.
The exterior of the cupboards were soiled with debris above the bakery preparation station on the buffet line.
Several pans were stacked wet on the clean pan storage rack.
The caulking was loose on the ware wash area hand sink. The ware wash three-compartment sink faucet was leaking.
The wall vents next to the buffet line grill hoods were soiled with dust. The wall was scratched around the pan storage area in the bakery preparation area.

08/01/13. Cut ice burg lettuce and cut romain lettuce was 65�°F on the north side of the salad bar station for more than four hours. (Product discarded)

Food debris were observed in the salad bar hand sink.
