Violation descriptions and comments

An employee was observed sweeping the floor and handling dirty dishes and then handling clean dishes without first washing hands.
An employee was observed drying hands on a common towel in the kitchen. Ice cream was present in the basin of the main street bakery hand sink.
An open employee beverage was present on the diver wall between the bakery preparation area and the produce preparation area in the kitchen.
An employee was observed handling ready to eat cake with bare hands in the kitchen.
Teriyaki chicken was 96�°F and beans were 125�°F-133�°F in the kitchen steam table
The final rinse of the dish machine measured less than 160�°F on the test strip.
Hot water at all hand sinks was 55�°F-70�°F and did not reach at least 100�°F. Hot water at the preparation sinks was 55�°F-70�°F. The hot water faucet on the meat preparation sink was not functioning. The hot water to the sink by the dish machine was shut off. THe west end faucet of the three-compartment sink did not have a hot water switch to access hot water. The first faucet on the three-compartment sink was suppling hot water at 70�°F.
