OBSERVED EMPLOYEE WITH A FACE MASK,(WHICH COVERED ONLY THE NOSE) WASHING SHELVES IN DISH ROOM,THEN WALKED BY THE LARGE DOUGH MIXER IN PREP AREA, AS HE WAS WAITING FOR THE DOUGH TO FINISH MIX,HE REMOVE HIS MASK AND WITH PALM OF HIS HAND WIPED HIS NOSE AND CLEANED HIS HAND ON APRON THAT HE WAS WEARING.,WITHOUT WASHING HANDS HELPED REMOVING DOUGH FROM THE MIXER TO PREP TABLE. INFORMATION ON HAND WASHING PROCEDURE GIVEN. CRITICAL VIOLATION:7-38-010(A)
FOUND EXPOSED SINK IN POOR REPAIR. HOT WATER VALVE WAS SHUT-OFF FROM UNDER THE SINK, MANAGER TURNED ON THE VALVE UPON MY REQUEST. THE PAPER TOWEL DISPENSER NOT IN WORKING CONDITION, NOT ABLE TO DISPENSE PAPER DUE TO NO BATTERIES. MANAGER BROUGHT BATTERIES UPON MY REQUEST AND PRESENTLY PAPER DISPENSER IN WORKING CONDITION. ONLY ONE EXPOSED SINK THROUGHOUT THE PREP AREA. ALSO THE SAME SINK IS USED BY STAFF AFTER USING WASHROOM. BUSINESS WAS IN FULL OPERATION. CRITICAL VIOLATION: 7-38-030.
