Ventilation: All plumbing fixtures, such as toilets, sinks, washbasins, etc., must be adequately trapped, vented, and re-vented and properly connected to the sewer in accordance with the plumbing chapter of the Municipal Code of Chicago and the Rules and Regulations of the Board of Health. Must provide a mopsink with a backflow prevention device and hot/cold running water per city code.
Adequate and convenient toilet facilities shall be provided. They should be properly designed, maintained, and accessible to employees at all times. Must provide an exposed handwashing sink with hot/cold running water per city code and soap/handrying device.
A certified food service manager must be present in all establishments at which potentially hazardous food is prepared or served. Must provide an original city of chicago certificate or proof of enrollment.
All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair. Must seal/paint raw wood storage shelf and bottom of prep table in prep and as needed.
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. Must provide covers for basement floor drains and seal or replace floor tile in front of rear exit door.
The walls and ceilings shall be in good repair and easily cleaned. Must seal/caulk around all pipes/conduits and all cracks/crevices throughout. Must replace/provide missing/damaged tiles by rear cooking equipment and at bottom wall by basement door. Must clean vents throughout.
Toilet rooms shall be completely enclosed and shall be vented to the outside air or mechanically ventilated. Must provide a self closing device to left washroom door.
