All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair. MUST SEAL OR PAINT ALL RAW WOOD SHELVES IN BASEMENT STORAGE AND IN CLASSROOM 7.
All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. MUST DETAIL CLEAN THE FOLLOWING: CABINETS IN CLASSROOM 9, REACH-IN (CHEST) FREEZER, ALL COOLERS IN KITCHEN STORAGE AND INTERIOR OF COOKING EQUIPMENT IN KITCHEN AREA.
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. MUST DETAIL CLEAN FLOORS IN ALL STORAGE, MECHANICAL, ELECTRICAL, KITCHEN AND CLASSROOMS. MUST MAKE FLOORS IN BASEMENT STORAGE SMOOTH AND EASILY CLEANABLE. MUST PROVIDE A DRAIN COVER TO FLOOR DRAIN IN FRONT OF DISH MACHINE IN KITCHEN AREA. MUST ELEVATE ALL STOCK ITEMS ATLEAST 6' OFF THE FLOOR IN ALL STORAGE AREAS.
The walls and ceilings shall be in good repair and easily cleaned. MUST CLEAN ALL VENTS IN KITCHEN AREA, REMOVE PEELING PAINT AND PAINT WALLS IN BASEMENT HALLWAY BY PAINT ROOM, IN CLASSROOM 7, CLASSROOM 10 AND THROUGH OUT AS NEEDED. MUST SEAL AROUND ALL PIPES/CONDUITS AND REPAIR HOLE IN WALL BEHIND KITCHEN STORAGE ROOM DOOR.
Ventilation: All plumbing fixtures, such as toilets, sinks, washbasins, etc., must be adequately trapped, vented, and re-vented and properly connected to the sewer in accordance with the plumbing chapter of the Municipal Code of Chicago and the Rules and Regulations of the Board of Health. MUST FIX LOOSE, LEAKING FAUCET ON 1-COMPARTMENT SINK IN CLASSROOM 9 IN BASEMENT.
Cleaning equipment shall be properly stored away from food, utensils, equipment, and clean linens. MUST REMOVE ALL UNNECESSARY ARTICLES AND ORGANIZE ALL OTHERS IN ALL STORAGE CLOSETS.
