All cold food shall be stored at a temperature of 40F or less. FOUND POTENTIALLY HAZARDOUS FOOD (ROAST CHICKEN) AT IMPROPER TEMPERATURE REQUIREMENT DURING STORAGE INSIDE WALK-IN COOLER. NOTED ROAST CHICKEN INTERNAL TEMPERATURE OF 50.3F, 49.8F, 48.5F, 49.3F AND 49.9F. THE SAID FOOD PRODUCT WAS PREVIOUSLY COOKED LAST NIGHT. INSTRUCTED ALL POTENTIALLY HAZARDOUS FOOD MUST MAINTAIN COLD HOLDING TEMPERATURE OF 40F OR BELOW AND HOT HOLDING TEMPERATURE OF 140F OR ABOVE. NOTED WALK-IN COOLER AIR TEMPERATURE OF 41.0F. All parts of the food establishment and all parts of the property used in connection with the operation of the establishment shall be kept neat and clean and should not produce any offensive odors. Potentially hazardous foods does not meet temperature requirement during storage, preparation or service. Found in back storage room at room temperature-30 gallon container-approximately half-filled with red salsa (cooked) at 57.9 F that was prepared 01-11-2012. Instructed manager that potentially hazardous foods must maintain proper temperature at 40 F or below. Also, instructed on proper cooling methods for storing in swallow containers ice bath and cooling from 140 F to 70 F in 4 hours and 70 F to 40 F in 2 hours. Critical citation issued 7-38-005(A). Manager vouluntarily denatured and discarded. Value $80, approximately 15 gallons.
