MANAGEMENT VOLUNTARILY DISCARDED 400# OF FOOD WORTH $2,119. CRITICAL VIOLATION 7-38-005A. FOOD NOT PROTECTED DURING PREPARATION. OBSERVED A SMOKER UNIT ON PREMISES AND SMOKED PORK BEING PREPARED DURING THE INSPECTION WITHOUT PROOF OF IDPH CERTIFICATION OF THEIR HACCP PROGRAM. MANAGEMENT WAS INSTRUCTED TO DISCARD ANY SMOKED MEATS ON THE PREMISES AND TO HAVE THEIR HACCP PROGRAM CERTIFIED BY IDPH. SMOKER TAGGED HELD FOR INSPECTION.
