Containers and utensils shall be inverted, covered, or otherwise protected from contamination until used. All single-service drinking straws and containers shall be discarded immediately after use. FOAM CUPS ARE USED IN FOOD STORAGE AND AND HOLDING, INSTRUCTED TO USE PROPER UTENSILS.
The walls and ceilings shall be in good repair and easily cleaned. WALLS BEHIND FRONT 2 PREP AREAS IN POOR REPAIR, DAMAGED DRY WALL. INSTRUCTED TO INSTALL A DURABLE SMOOTH SURFACE THATS EASY TO CLEAN.
The flow of air discharged from kitchen fans shall always be through a duct to a point above the roofline. FAN COVER IN WALK-IN COOLER NOT CLEAN, HEAVY DUST AND DIRT BUILD UP, INSTRUCTED MGR TO CLEAN AND MAINTAIN.
All parts of the food establishment and all parts of the property used in connection with the operation of the establishment shall be kept neat and clean and should not produce any offensive odors. MUST STORE EMPLOYEES PERSONAL ITEMS A WAY FROM FOOD STORAGE AND PREP AREA INCLUDING OPEN DRINKS CONTAINERS.
