The walls and ceilings shall be in good repair and easily cleaned. Peeling paint at the outer left side of hood panel must be re-sealed/re-surfaced.
All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair. Any cardbosrd or glued liner on bottom of prep tables must be removed & made easily cleanable.

Containers and utensils shall be inverted, covered, or otherwise protected from contamination until used. All single-service drinking straws and containers shall be discarded immediately after use. CLEAN KNIVES MUST BE STORED IN A CLEAN/DRY PLACE OR A KNIFE RACK (NOT BETWEEN WALL & PREPTABLE).

(7-38-005A) INADEQUATE FOOD PROTECTION. FOUND A SMALL METAL PAN OF THINLY SLICED BEEF IN UPRIGHT COOLER (FOR PHILLY CHEESESTEAK SANDWICHES), THAT WAS SITTING ON BLOODY LIQUID. INSTRUCTED TO REMOVE PRODUCT & ALWAYS STORE RAW MEATS ON A DRIP TRAY INSIDE PANS. All food should be properly protected from contamination during storage, preparation, display, service, and transportation.
THE BASE OF THE 3-COMP SINK SPRAYER FAUCET IS LEAKING, MUST FIX. Ventilation: All plumbing fixtures, such as toilets, sinks, washbasins, etc., must be adequately trapped, vented, and re-vented and properly connected to the sewer in accordance with the plumbing chapter of the Municipal Code of Chicago and the Rules and Regulations of the Board of Health.
ALL ICE SCOOPS MUST BE STORED IN A CLEAN PLACE/CONTAINER. Between uses and during storage ice dispensing utensils and ice receptacles shall be stored in a way that protects them from contamination.
DUSTY FAN GUARDS OF MOST COOLERS & ICE BUILD-UP ON A CONDENSER OF THE LEFT UPRIGHT COOLER MUST BE CLEANED & MAINTAINED. (INCLUDING THE BASEMENT COOLER). All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily.
