All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. INSTRUCTED TO CLEAN AND MAINTAIN THE FOLLOWING: INTERIOR AND EXTERIOR SURFACES OF MEAT DISPLAY CASE (WINDOW CASE AND HANDLE WITH DRIED MEAT DEBRIS AND SPILLS), CAULKING AROUND EXPOSED HAND SINK WITH BLACK MOLD LIKE BUILD-UP AROUND OR REMOVE AND RE CAULK.
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. INSTRUCTED TO CLEAN AND MAINTAIN FLOORS ALONG THE WALLS AND UNDER PALLETS IN REAR STORAGE AREA AND UNDER DISPLAY SHELVES AT FRONT DISPLAY AREA.
All food establishments that display, prepare, or store potentially hazardous foods shall have calibrated metal stem thermometers, provided and conspicuous, for refrigerated and hot food units.
