All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair. Rubber gaskets of 2-cooler doors (at front & rear of kitchen) are in poor repair-must fix/replace. Any cutting board with deep/dark grooves must be sanded/bleached or replaced to make surfaces smooth/easily cleanable.
The walls and ceilings shall be in good repair and easily cleaned. Dusty fan guards of coolers & grease build-up on attachments to interior of hood above cooking equipment must be kept clean.
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. Must fix the cement around the threshold of rear door.
