All utensils shall be thoroughly cleaned and sanitized after each usage. MUST CLEAN-SANITIZE AND COVER UNUSED COOKING EQUIPMENT IN KITCHEN, CLEAN-SANITIZE, DISPLAY SHELVES, COOLERS, CHEST FREEZER AND PREP TABLE IN KITCHEN.
