All employees who handle food shall wash their hands as often as necessary to maintain a high degree of personal cleanliness and should conform to hygienic practices prescribed by the Board of Health. OBSERVED FOOD HANDLER REMOVING AND RINSING MULTI-USE UTENSILS AND RETURNING TO HANDLE COOKED POTENTIALLY HAZARDOUS FOOD BUT, NO WASHING HER HANDS; IN KITCHEN. ALSO OBSERVED ANOTHER FOOD HANDLER AT DELI AREA WASHING HANDS INSIDE A PREP SINK, POOR HYGIENIC PRACTICES. INSTRUCTED HANDS MUST BE WASHED AFTER ANY CONTAMINATING CONDITION AT EXPOSED SINK WITH WARM WATER AND SOAP. CITATION ISSUED 7-38-010A CRITICAL.

THE ICE MACHINES HAVE RUST AND LIME BUILDUP ON THE TOPS OF THE MACHINES, DELIME AND CLEAN THE UNITS AND WASH, RINSE AND SANITIZE THE DOORS. THE CEILINGS OF THE WALK IN COOLERS WHERE THE LIGHT FIXTURES WERE REPLACED AND ARE DIRTY; WASH, RINSE AND SANITIZE THE COOLER CEILINGS. THE FREEZER CONDENSER IS FROZEN UP AND ONE OF THE FANS IS NOT WORKING, DEFROST AND REPAIR THE UNIT. IF THE BUTCHER COOLER SHELVES HAVE A CONDENSATION BUILDUP, WIPE DOWN AREAS WITH A SANITIZING CLOTH OR PAD.
