All employees who handle food shall wash their hands as often as necessary to maintain a high degree of personal cleanliness and should conform to hygienic practices prescribed by the Board of Health. OBSERVED FOOD HANDLER REMOVING AND RINSING MULTI-USE UTENSILS AND RETURNING TO HANDLE COOKED POTENTIALLY HAZARDOUS FOOD BUT, NO WASHING HER HANDS; IN KITCHEN. ALSO OBSERVED ANOTHER FOOD HANDLER AT DELI AREA WASHING HANDS INSIDE A PREP SINK, POOR HYGIENIC PRACTICES. INSTRUCTED HANDS MUST BE WASHED AFTER ANY CONTAMINATING CONDITION AT EXPOSED SINK WITH WARM WATER AND SOAP. CITATION ISSUED 7-38-010A CRITICAL.

THE CEILING ABOVE THE DELI AS SOME DUSTY BUILDUP AND STAINED LIGHT SHIELDS; WASH, RINSE AND SANITIZE THIS AREA.
THE LARGE CLEAN POTS AND PANS ARE STORED IN THE REAR STORAGE RACK RIGHT SIDE UP, INVERT THE POTS AND PANS SO THEY DRAIN AND SO DEBRIS CANNOT FALL INSIDE. THE CAN OPENER BASE IN THE KITCHEN IS DIRTY; WASH, RINSE AND SANITIZE SAID AREA.
THE LARGE STAINLESS STEEL BLENDER HAS DARK STAINING IN THE BOTTOM OF THE BOWL SECTION, SCRUB ALL BUILDUP OFF AND SANITIZE. THE ICE MACHINES HAVE RUST AND LIME BUILDUP ON THE TOPS OF THE MACHINES, DELIME AND CLEAN THE UNITS AND WASH, RINSE AND SANITIZE THE DOORS. THE CEILINGS OF THE WALK IN COOLERS WHERE THE LIGHT FIXTURES WERE REPLACED AND ARE DIRTY; WASH, RINSE AND SANITIZE THE COOLER CEILINGS. THE FREEZER CONDENSER IS FROZEN UP AND ONE OF THE FANS IS NOT WORKING, DEFROST AND REPAIR THE UNIT. IF THE BUTCHER COOLER SHELVES HAVE A CONDENSATION BUILDUP, WIPE DOWN AREAS WITH A SANITIZING CLOTH OR PAD.
THE ICE SCOOPS HAVE NO SANITARY SPACE OR STORAGE CONTAINER, OBTAIN A SANITARY ICE SCOOP STORAGE DEVICE.
