The walls and ceilings shall be in good repair and easily cleaned. MAKE ALL WALLS SMOOTH EASY CLEANABLE WITHOUT ANY CRACKS, HOLES PREVENTING INSECT ENTRANCE AND HARBORAGE.
All food establishments that display, prepare, or store potentially hazardous foods shall have calibrated metal stem thermometers, provided and conspicuous, for refrigerated and hot food units. PROVIDE THERMOMETERS INSIDE COOLERS WITH POTENTIALLY HAZARDOUS FOODS ARE HELD, i.e.MILK.
Ventilation: All plumbing fixtures, such as toilets, sinks, washbasins, etc., must be adequately trapped, vented, and re-vented and properly connected to the sewer in accordance with the plumbing chapter of the Municipal Code of Chicago and the Rules and Regulations of the Board of Health. PROVIDE FAUCET OVER SOFT SERVE MACHINE WITH HOT AND COLD RUNNING WATER CONNECTER TO THE CITY WATER SUPPLY PER CITY CODE.
In all food establishments, toilet facilities shall be kept clean and in good repair and shall include an adequate supply of hot and cold or tempered water, soap, and approved sanitary towels or other approved hand-drying devices. PROVIDE PAPER TOWELS AND SOAP AT ALL HAND WASHING SINKS.
