Must clean the follwing:THE INTERIOR TOP PORTION OF THE MICROWAVE; THE HOT HOLDING UNIT BOTTOM OF THE SHELF, WITH DUST BUILT UP; THE EXTERIOR SIDES OF THE COOKING STOVES; THE DRY CANNED STORAGE SHELVES; THE INTERIOR PANEL OF THE ICE MACHINE; THE SHELVES IN THE HOT WATER HEATER; ALL THE LIDS OF THE BULK CONTAINER WITH RICE, FLOUR, SUGAR,ETC.
MUST DETAIL CLEAN ALL THE VENTS BY THE HOOD, THE LIGHT SHIELD OF ALL LIGTING FIXTURES BY THE HOOD. Must readjust the self closing device of the door of the women's washroom.
NEED TO STORE ALL FOOD CONTAINERS INSIDE THE WALK IN COOLER 6' off the floor.
Clutter by the hot water tank and in front of the dish machine. Instructed to organize the area, discard any unused items, articles not being used to prevent rodent insects harborage.

All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair.Non food contact surfaces of cooler shelving, ice machine that had peeling paint, rust, shall be repair/replaced.
All food not stored in the original container shall be stored in properly labeled containers. Found some food items not properly dated/ labeled in reach in freezer. coolers, must date and label all food items in coolers/freezers.
All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. All utensils shall be thoroughly cleaned and sanitized after each usage. Non food contact surfaces of walk in cooler shelving/racks not clean need detailed cleaning(crevices). Non food contact surfaces of reach in freezer, cooler shelving, display cooler, ice machine not clean need detailed cleaning. Storage shelving , prep tables in kitchen prep areas, and storage areas not clean need cleaning(detailed). Bathrooms cabinet shelving need cleaning(detailed).
Floors under heavy equipment, cooking equipment, dismachine areas, prep tables, and storage shelving/racks not clean need detailed cleaning(corners). Floors in boiler room, storage rooms need detailed cleaning(corners). Floors in bar area, under 3 compartment sink not clean need detailed cleaning.
The walls and ceilings shall be in good repair and easily cleaned. Use dustless cleaning methods.Walls, ceiling tiles in rear kitchen prep areas not clean need detailed cleaning. Walls that had peeling paint in kitchen areas, shall be repair.
All rooms in which food or drink is prepared, or in which utensils are washed, shall be lighted so that a minimum of 50-foot candles of light is available on all work surfaces. Shielding to protect against broken glass falling into food shall be provided for all artificial lighting sources in preparation, service, and display facilities.Damaged/broken light shields in kitchen prep areas shall be replaced. light shields in prep area not clean need detailed cleaning.
