The walls and ceilings shall be in good repair and easily cleaned. Remove the grease dripping down into the electrical outlets behind the gyros machine and install a working grease catch for the hood above said area.
Containers and utensils shall be inverted, covered, or otherwise protected from contamination until used. All single-service drinking straws and containers shall be discarded immediately after use. The dirty knives and the holder they were in were washed, rinsed and sanitiized at this time.
