All food establishments that display, prepare, or store potentially hazardous foods shall have calibrated metal stem thermometers, provided and conspicuous, for refrigerated and hot food units. NO VISIBLE THERMOMETER WAS OBSERVED INSIDE OF THE COFFEE STATION PREP COOLER. MUST PROVIDE.
All cold food shall be stored at a temperature of 40F or less. OBSERVED POTENTIALLY HAZARDOUS FOODS AT IMPROPER TEMPERATURES IN THE PREP COOLER. OBSERVED SLICED AND SHREDDED CHEESE AT 48.3F, AND TURKEY BREAST AT 45.6F. MANAGEMENT VOLUNTARILY DISCARDED 8# OF FOOD WORTH $40. CRITICAL VIOLATION 7-38-005A.
All food not stored in the original container shall be stored in properly labeled containers. MUST LABEL AND DATE FOODS IN THE WALK-IN COOLER.
All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. DETAIL CLEAN THE WIRE STORAGE RACKS UNDERNEATH THE VENTILATION HOOD, INTERIOR OF VULCAN OVEN, LIGHT SHIELDS IN PREP AREA, INTERIOR OF MICROWAVES.

ALL TO GO FOOD CONTAINERS MUST BE STORED INVERTED.
