MANAGER STATES FOODS WERE COOKED 08/11/10. NO TIME/TEMPERATURE LOGS. INSTRUCTED TO PROPERLY COOL HOT FOODS FROM 140F TO 70F IN 2 HOURS AND 70F TO 40F IN 4 HOURS. MANAGER VOLUNTARILY DISCARDED SAID ITEMS AT APPROXIMATE WEIGHT OF 75LBS AND AT APPROXIMATE VALUE OF $100.00. CRITICAL 7-38-005(A) ISSUED.
