All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. DETAIL CLEAN THE PREP TABLES, MICROWAVE, EXTERIOR OF DRY STORAGE CONTAINERS, WIRE RACKS IN THE WALK-IN COOLER.
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. DETAIL CLEAN THE FLOOR OF THE 1ST FLOOR PREP AREA.

NO BACKFLOW PREVENTION DEVICES AT THE WATER SUPPLY LINE TO HOT WATER URN OR HOSE BIBBS IN BASEMENT. MUST INSTALL SAME. REMOVE THREADED FAUCET FROM BASEMENT 3 COMPARTMENT SINK. OBSERVED HOSE ON WALL NEXT TO SINK.
