All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. FAN COVER INSIDE WALK-IN COOLER AND UPPER PANEL OF ICE MAKER NOT CLEAN INSTRUCTED TO CLEAN AND MAINTAIN.

Shielding to protect against broken glass falling into food shall be provided for all artificial lighting sources in preparation, service, and display facilities. MISSING LIGHT SHIELD FOR LIGHT FIXTURE ABOVE PREP TABLE, INSTRUCTED TO PROVIDE.
All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair. ICE BUILD-UP INSIDE PREP COOLER, INSTRUCTED TO REMOVE.

MUST STORE ALL WASH CLOTHS IN A BUCKET OF SANITIZING SOLUTION WHEN NOT IN USE.
MUST CLEAN AND MAINTAIN THE INTERIOR OF THE ICE CREAM FREEZER IN THE PREP AREA-REMOVE ICE BUILD UP.
MUST REPLACE ALL BROKEN/DAMAGED FLOOR TILES UNDER 3-COMP. SINK. MUST ALSO LEVEL FLOOR-IT IS UNEVEN UNDER THE 3 COMP SINK.
MUST FIX THE LEAK AT THE PIPE UNDER THE MIDDLE COMPARTMENT AND AT THE BASE OF THE LEFT FAUCET ON THE 3-COMP. SINK.
