All parts of the food establishment and all parts of the property used in connection with the operation of the establishment shall be kept neat and clean and should not produce any offensive odors. INSTRUCTED TO REMOVE UNNECESSARY ARTICLES STORED ON TOP OF 3 DOOR REACH-IN FREEZER TO PREVENT RODENT AND INSECT HARBORAGE.
All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. NOTED LIME BUILD-UP BEHIND UPPER PANEL OF ICE MACHINE. INSTRUCTED TO CLEAN AND MAINTAIN.
Between uses and during storage ice dispensing utensils and ice receptacles shall be stored in a way that protects them from contamination. OBSERVED ICE SCOOP STORED ON TOP OF ICE MACHINE. INSTRUCTED TO STORE IN A SEPARATE CLEAN CONTAINER TO PREVENT CONTAMINATION.

All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair. INSTRUCTED TO PROVIDE TIGHT FITTING LID/COVER FOR ICE BIN BEHIND FRONT SERVICE COUNTER.
The walls and ceilings shall be in good repair and easily cleaned. INSTRUCTED TO CLEAN AND MAINTAIN WALLS INSIDE WALK-IN COOLER (NOTED MOLD LIKE BUILD-UP).
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. INSTRUCTED TO CLEAN AND MAINTAIN FLOORS ALONG THE WALLS AND IN ALL CORNERS IN PREP AREA ESPECIALLY UNDER 3 COMPARTMENT SINK, UNDER UNUSED 1 COMP SINK, AND FLOORS THROUGHOUT REAR STORAGE/LIQUOR ROOM. ---- MUST REPLACE MISSING FLOOR BASEBOARD BEHIND STORAGE RACKS BY WALK-IN COOLER.

All food establishments that display, prepare, or store potentially hazardous foods shall have calibrated metal stem thermometers, provided and conspicuous, for refrigerated and hot food units. INSTRUCTED TO PROVIDE THERMOMETER VISIBLE INSIDE ALL COOLERS AND FREEZERS.
The walls and ceilings shall be in good repair and easily cleaned. NOTED CEILING (BY CONDENSER) INSIDE WALK-IN COOLER IN POOR REPAIR WITH RUST BUILD-UP. INSTRUCTED TO FIX, REMOVE RUST AND REPAINT.
