All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. The following not clean- reach coolers door rubber gaskets with food buildup, interior of ice machine with slight lime build up and walk in coolers compressors with accumilated dust build up (rear of compressors). Must clean and maintain all unclean equipment.
The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. Observed food/grease build up on floor under and around fryers/cooking equipment. Must clean and maintain floor throughout prep area.
The walls and ceilings shall be in good repair and easily cleaned. Observed dust buildup on ceiling vent cover at prep area and stained/unclean ceiling tiles above prep area. Must clean/replace all unclean ceiling tiles and clean ceiling ventilation cover.

LEAKY PIPE UNDER BAR SINK (LEFT SIDE) MUST BE FIXED, A WATER LINE UNDER THE BEER TAP MUST EXTEND TO THE FLOOR DRAIN. Ventilation: All plumbing fixtures, such as toilets, sinks, washbasins, etc., must be adequately trapped, vented, and re-vented and properly connected to the sewer in accordance with the plumbing chapter of the Municipal Code of Chicago and the Rules and Regulations of the Board of Health.
