Equipment and utensils should get proper exposure to the sanitizing solution during the rinse cycle. Bactericidal treatment shall consist of exposure of all dish and utensil surfaces to a rinse of clean water at a temperature of not less than 180F.unable to properly wash, rinse and sanitzed at time of inspection on 2/09/2010.citation issued H000055945(critical violation).
In food establishments, there shall be adequate sewage and waste water disposal facilities that comply with all the requirements of the plumbing section of the Municipal Code of Chicago.found observed sewage back up from bsmt.floor, sewer not covered, (missing lid).also 3 compartment sink drain not connected to drain pipe in bsmt storage area, hot water heater area in bsmt.citation issued#H000055945 (critical violation)water draining all over bsmt floor/ground, water standing on bsmt floor aprox 1/4inch high.water from sewage drain (black sewage)all over bsmt. time of inspection on 2/09/2010.
All necessary control measures shall be used to effectively minimize or eliminate the presence of rodents, roaches, and other vermin and insects on the premises of all food establishments, in food-transporting vehicles, and in vending machines.above had no proof of pest control service, pest control service log book, at time of inspection on 2/09/2010.citation issued#H000055945(serious violation).
All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. All utensils shall be thoroughly cleaned and sanitized after each usage.non food contact surfaces of cooler shelving, storage shelving nee detailed cleaning.

Shielding to protect against broken glass falling into food shall be provided for all artificial lighting sources in preparation, service, and display facilities.light shields in pre areas, sales floor need cleaning.
The flow of air discharged from kitchen fans shall always be through a duct to a point above the roofline. Ventilation: All plumbing fixtures, such as toilets, sinks, washbasins, etc., must be adequately trapped, vented, and re-vented and properly connected to the sewer in accordance with the plumbing chapter of the Municipal Code of Chicago and the Rules and Regulations of the Board of Health.damaged exhaust vent(ventilation in rear storage area shall be repair/replaced.
All parts of the food establishment and all parts of the property used in connection with the operation of the establishment shall be kept neat and clean and should not produce any offensive odors. Cleaning equipment shall be properly stored away from food, utensils, equipment, and clean linens.excess clutter in rear storage areas shall be removed, stock items must be stored six inches off of floor to prevent pest harborage.
