The floors shall be constructed per code, be smooth and easily cleaned, and be kept clean and in good repair. Must keep floor tiles in rear kitchen clean & dry at all times.
All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. Interior of prep sink & rear hand sink must be kept clean & tidy.
Ventilation: All plumbing fixtures, such as toilets, sinks, washbasins, etc., must be adequately trapped, vented, and re-vented and properly connected to the sewer in accordance with the plumbing chapter of the Municipal Code of Chicago and the Rules and Regulations of the Board of Health. Leaky elbow pipe under prep sink & at bottom right compartment of 3-comp sink.

ANY UNNECESSARY ARTICLES/UNUSED EQUIPMENT IN BASEMENT STORAGE ROOM, MUST BE REMOVED OR KEPT CLEAN & COVERED.
All food not stored in the original container shall be stored in properly labeled containers. ALL FOODS STORED IN WALK-IN COOLER MUST BE DATED/LABELED; ANY OPEN #10 CANS OF FOOD MUST BE TRASFERRED TO REGULAR CONTAINERS.
All food establishments that display, prepare, or store potentially hazardous foods shall have calibrated metal stem thermometers, provided and conspicuous, for refrigerated and hot food units. MUST REPLACE MISSING INTERNAL THERMOMETERS IN MOST COOLERS.

MUST DETAIL CLEAN FLOORS AT FRONT GRILL AREA AND REAR KITCHEN AREA UNDER ALL HEAVY EQUIPMENT TO REMOVE GREASE BUILD UP.
MUST REPAIR AND REPAINT WALL NEXT TO REAR EXPOSED HAND SINK SO AS TO BE SMOOTH AND EASILY CLEANBLE. ALSO MUST CLEAN WALL ABOVE 3COMP SINK.
