The walls and ceilings shall be in good repair and easily cleaned. Dusty ceiling vents & areas around them must be kept clean. Filters at hood of cooking equipment must be kept clean also.
All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair. Must seal any bare wooden part of wall shelving in rear prep area.
