All food and non-food contact equipment and utensils shall be smooth, easily cleanable, and durable, and shall be in good repair. MUST SEAL SMALL OPENING ALONG RIGHT SIDE OF EXIT DOOR IN KITCHEN STORAGE ROOM. SEAL SMALL OPENING ALONG BOTTOM OF MAIN ENTRANCE DOOR AND MAKE TIGHT FITTING.
All food and non-food contact surfaces of equipment and all food storage utensils shall be thoroughly cleaned and sanitized daily. MUST DETAIL CLEAN METAL PLATE ON INTERIOR OF ICE MACHINE. MUST REMOVE DUST FROM VENTILATION HOOD OVER COOKING EQUIPMENT AND DETAIL CLEAN INTERIOR OF FRYER.
The walls and ceilings shall be in good repair and easily cleaned. MUST SCRAPE AND REPAINT CHIPPING PAINT ON WALLS IN CORNER UNDER DISH MACHINE.
Ventilation: All plumbing fixtures, such as toilets, sinks, washbasins, etc., must be adequately trapped, vented, and re-vented and properly connected to the sewer in accordance with the plumbing chapter of the Municipal Code of Chicago and the Rules and Regulations of the Board of Health. SMALL AMOUNTS OF WATER LEAKING FROM OPEN SITE DRAIN WHEN WATER IS DRAINED FROM TWO COMPARTMENT SINK IN DISH WASHING AREA. MUST REPAIR SO THAT SINK DRAINS PROPERLY. MUST INCREASE HOT WATER PRESSURE AT WASHROOMS WHERE NEEDED.
